Mmmmmm...Mexican Chicken

Tried a new {YUMMY} recipe last night & I LOVED it!

Mexican Chicken

Ingredients:
pack of thawed chicken breasts
1 can of cream of chicken
1 can of cream of mushroom
1 can of rotel
sharp cheddar cheese
corn tortillas

Step 1: Boil chicken breast












Step 2: Tear up corn tortillas and place at bottom of 9x13 casserole dish




















Step 3: Chop up chicken












Step 4: Mix all 3 soups with chopped chicken












Step 5: Place mixture on top of the tortillas in casserole dish & top generously with cheddar cheese




















Step 6: Bake for 30 minutes at 350 degrees & Enjoy




















I enjoyed mine with sour cream on top :)  Oh, and Chloe enjoyed some ice cream time after I rolled her hair.  Tonight is the big night....first day of Recital Craziness!

Strawberry Pickin'

Saturday morning, Blake & I took the kids to H&S Strawberry Patch near Montgomery Central.  It was a perfect morning.  Addison and Adrienne came out to pick with us too!  The girls had a big time running through the rows of strawberries finding little ones and big ones!  We brought home a huge crate full.  It was our first time doing this...I know it will be a yearly tradition.  Carter wasn't quite big enough yet, but I know he will be ready next year!

Happy Month-Day Carter~7 Months

WOW!  Our sweet baby boy turns 7 months old today!  I know I say this every time, but I can't believe how fast the time is going by!  In 5 short months, this precious baby will turn 1!  1....seriously, I need time to freeze now.  I don't know if I can emotionally handle Chloe starting school and Carter turning 1...just too much for me to wrap my mind around!  We had a mini photo shoot with Carter right before bed tonight...while I was snapping pictures, I noticed he was doing this:
What have you been up to lately, Carter?
*You are rolling EVERYWHERE! 
*You have mastered rolling from back to belly & belly to back.
*You sleep on your belly just like your sister did with your bottom straight in the air!
*You are still wearing size 4 diapers.
*Last time we visited the Dr (top of last week), you weighed in at 21lbs 12oz (WOW!).
*You are teething like crazy...and drooling everywhere.
*You are babbling a little bit but I imagine that will increase dramatically if we move forward with tubes.
*You eat 5 times a day (formula--6 oz) and eat 4 jars of food throughout the day.
*You have been eating the meat mixed meals for dinner for about a month now--YUM!
*You still love your pacifier.
*Sleep wise, you go to bed at 7:30 and wake up between 5-6 am (this is great during the work week but no so fun on the weekends).
*Still the smiliest baby in history...even though you have kept an ear infection for the last 4 months.  Your temperament still amazes me everyday!

Carter Boy, we are enjoying every second of your being.  You bring nothing but joy to me, Daddy, and Chloe!  We love you so much!


A Noteworthy Day at the Jenkins House!

Well, today my first born graduated from Preschool.  The more I think about it, the more I can't believe this day has already come and gone.  Chloe was so precious during the ceremony.  She proudly sang the Pledge of Allegiance and her other 2 graduation songs!  I know that she has been practicing so hard over the last few weeks.  She sat proudly next to Mrs. Maggie {her teacher in the Carebear room}!  She adores Mrs. Maggie & we will be sad to move on to another teacher once Kindergarten starts.  I guess the reality that 'real' school starts in a few short months hit me hard tonight!  I just can't believe how fast the last 5 years have gone.  It feels like Dr. Anderson was just confirming that Chloe was even on her way!

A visit to the ENT

Monday, Carter had his consult with Dr. Brandon!  At first meeting, I was a little nervous that we had jumped the gun a bit...Dr. Brandon said his ears were not inflamed right now.  Well, we moved ahead to meet with the Audiologist.  She did a simple hearing test on Carter & also checked the fluid levels in his ears.  Just as we had suspected, he has fluid in both ears (mostly in the right which has been the ear that has given us the most trouble).  Also, he responded very well to her voice but when it came to responding to different sounds, he didn't do as well.  Dr. Brandon said that his 'levels' were not where he would hope for a 7 month old.  He said Carter is a very good candidate for tubes.  We are going to finish off the current medicine he is on & check back in about 6 weeks to see how his ears look...if they are still yucky, then we will move forward with the tubes!  I'm praying they stay clear over the coming weeks...I will hate to have to put this sweet boy to sleep to have surgery...no matter how minor!


Weekend Wrap Up!!

Friday after work, I unloaded the kiddos and starting my normal evening routine.  Well, I noticed I hadn't seen Chloe in a minute or 2....I actually could not find her.  It just so happened that Aunt KK was coming by to pick something up.  When I heard the garage door open, it was only then that I found Chloe.  She was hanging out in her F150 listening to the radio and lounging!!!

Saturday was my good friend & co-worker Amanda's wedding.  I was so glad that Blake and I got to be a part of this!  It has been quite some time since I have been to a wedding....I feel like lately, I'm mostly at baby showers!  Brandon & Amanda are 2 of a kind.  The first seconds you spend with them, you can tell instantly how in love they are.  That definitely translated during their sweet ceremony and tender wedding vows!  Right now they are vacationing in Jamaica!   I hope you guys are having an amazing time!  Thanks for letting us be a part of your special day :)

I love crafts....and Bunco!

Tonight at Bunco, Shelby helped us create a super cute fabric wreath.  I don't peg myself as a crafty person, but I thought my creation turned out cute!  It was super simple and so fun to make.  I decided to make this for Chloe so I decorated it with felt flowers and a blue "C!"  I secretly hung it on her door after I got home so that when she wakes up she will have a fun surprise!  Brittnye and I were laughing about what her reaction will be...I'm sure it will go something like this: "Oh Mom....you made that especially for me?  It is SOOOOO beautiful!"  She is a complimentor....for that I love her! :)  I hope she loves it as much as I do!

For those that don't know, we don't actually play Bunco when we get together.  We never really have.  In the 6 years we have been getting together monthly, we have only played about 3 times!  We should really call it a dinner club or something!

Update on Carter

Well, we paid our favorite Pediatrician a visit today.  I feel like poor Carter lives at Premier Medical.  Today was suppose to be a recheck of his ears...to make sure they were clear!  Not the case.  Sadly, Carter now has a double ear infection (2 weeks ago, it was only in the right ear) & Dr. R said it was pretty gross!  I love how calm he is!  So....we are starting a new medication to see if it helps.  If it doesn't, I think Blake and I have decided that we are going to ask for a referral to the ENT.  We are just worried that he will have hearing loss or problems learning to talk because we are working on almost 4 months straight with an ear infection.  Is that some kind of record? 

Here is the good news, Carter is such an amazing little boy.  He doesn't complain one bit.  For as bad as Dr. R said his ears are, you would never, ever know!  If he was fussy, these past 4 months would have been terrible.  But, he lays down perfectly flat when he sleeps and doesn't complain; he is eating great; and his temperament is perfect!  God Bless this sweet baby of mine!
He has no idea that he is about to get 3 shots!

What a Happy Mother's Day!

Saturday night, we headed to our good friend's house--Adrienne and Travis!  It was a fun night filled with hoola-hooping, BBQ, and hanging out! 
Carter looked like such a big boy sitting in the high chair!  He had fun hanging out too!
The girls had a good time showing us their skills--Addison has it down pat!
Chloe decided to hone her skills at 'beauty shop' with Addison!  They are both so girly & I love it!
Right after bath time on Sunday!  Waking up to this every morning makes me one happy Mommy!
Sadly, we didn't get a picture of the 4 of us after church....but Casey snapped several for us at dinner!  These were 2 of my favorites!  Chloe is feeling sassy in her zebra pants if you can't tell!  These 3 people made my Mother's Day EXTRA special!
I get to enjoy a wonderful massage courtesy of my sweet Hubby...Blake and Chloe also brought me this beautiful orchid!  Blake said that Chloe picked it out when they were at the store last week!  She was so excited to bring it to me!  Chloe also went with Birdie to pick out a gift for me. She hid it upstairs and made me close my eyes when she brought it down!  She gave me a sweet card made at school, a pair of silver hoop earring, a balloon that says "Your Special," and a candle!  She picked it all out (thanks to Birdie for driving her :))!

Such a great day!
